BOK CHOY (in season-year round) is a sweet, succulent leafy vegetable from the brassica family, typically used in Asian-inspired dishes. It pairs well with spicy or sweet seasonings. Bok Choy contains calsium, vitamin C and vitamin K to support healthy bones.

@Deb Yuk >> head cheese. The scrapple I made doesn't have any meat in it, but traditional scrapple is just that .. scraps LOL. Just like hot dogs and bologna .. Lips and hip or beaks and cheeks LOL.

Scrapple come in pork, beef and turkey and taste really good but since I'm not eating meat I will be eating this kind. My husband and the kids like it. I'm shocked because my husband automatically says everything is nasty if it's vegan or vegetarian and he said he would eat it again. :)

LOL.. @Kathy Srapple is a breakfast meat you can buy in the supermarket that is basically scraps of meat (boiled hogs head) and corn meal and a few other ingredients. I made some homemade minus the meat, with veggies in it. an Amish recipe.

Searching online yesterday for a vegetarian recipe I saw that scrapple isn't everywhere. I think it is more commonly found in Pa and a few other areas.
